Jill’s Organic Chicken Salad

My mom taught me how to make chicken salad in college and it quickly became one of my go to staple meals! I have added some extra ingredients along the way to spruce it up. The great part about this chicken salad recipe is you can eat it alone since it is packed with so much flavor from the fresh fruit!  If you prefer you can also pair it with crackers (gluten free rice crackers are my favorite choice) or in a sandwich.

My organic chicken salad has become super popular among my friends! I am always packing it for days at the beach and road trips! If you know me, then you know I don’t like to be hungry, so I am always prepared with a snack…which is why I am now referred to as the Snack Queen! LOL! So now you know who to take a day trip with if you want to be well fed 😉 Try making it yourself and my organic chicken salad will become one of your favorites too!

 

Jill's Organic Chicken Salad

Prep Time 20 minutes
Servings 3

Ingredients

  • 1 Piece Organic Chicken Breast (large)
  • 1 Cup Organic Red Seedless Grapes
  • 1/2 Cup Organic Celery
  • 1/2 Cup Organic Pear (any type)
  • 1/4 Cup Organic Dried Cranberries
  • 1/4 Cup Organic Walnuts
  • 1/3 Cup Organic Mayonnaise
  • Organic Sea salt
  • Organic Pepper

Instructions

Chicken Prep

  1. Cut off any pieces of chicken you want to discard. Add to pot of water and boil about 15 minutes or until cooked through.

  2. Remove chicken from water. Cut into small pieces and add to a medium sized bowl. 

Chicken Salad Prep

  1. Prepare as the chicken is boiling: Wash all fruits and veggies and cut celery, grapes and pear into small pieces. 

  2. Add to bowl with chicken along with walnuts (break into smaller pieces with your hands), dried cranberries and mayonnaise. Add salt and pepper as you please. 

  3. Press down on chicken salad with a fork mixing together ingredients and blending chicken into smaller pieces. 

  4. Refrigerate 20 minutes and then enjoy!
